There are tea growing villages and areas of forest tea all over the Doi Chiang Dao region between Chiang Mai and Chiang Rai in Northern Thailand. Once part of a greater Dai Kingdom that spanned the regions of Burma, Yunnan, and parts of Laos, Northern Thailand is part of a rich history of tea culture that has brought Chinese tea practices and traditions to the area. Home to widespread old growth tea forests, Doi Chiang Dao is an amazing source of oolong, red and Pu’er teas.
Ingredients
Cinnamon is a spice derived from the bark of trees in the Cinnamomum genus.
Cardamom is a highly aromatic spice derived from the seeds of plants in the Elettaria and Amomum genera.
Ginger is one of the principal ingredients in the traditional herbal medicines and food cultures of Asia.
Black pepper, derived from the fruit of the Piper nigrum plant, is a versatile spice renowned for its strong, pungent flavor.
Clove is a warm and aromatic spice with a bold, slightly sweet flavor and notes of peppery intensity, often used to add depth to savory dishes, desserts, and seasonal recipes.

Based on an 8oz cup of tea made with suggested steeping method relevant to the tea type. An average cup of coffee contains about 90 – 120 mg / 8oz cup.

Instructions:
Mix 2 Tbsp chai, 1 cup water, and 1 cup milk in a saucepan. Bring to a boil then reduce the heat and simmer for 5 minutes. Remove from heat and stir in sugar or sweetener to taste. Strain into a mug or pitcher and enjoy! Chai can also be enjoyed over ice.
