The exceptional geological and climatic conditions of the Wuyi mountainous region further enhance the character of Golden Peony Rock Tea oolong. The tea's thick and mellow rock essence allows it to possess both fragrance and depth. The flavor is soft and smooth, with a sweet, lingering rock essence that envelops the senses, leaving a fragrant aftertaste on the palate.
Golden Peony is grown in the Wuyi Mountains, a region where an esteemed series of oolong teas known as Rock Teas (Yan Cha) are produced. Golden Peony and other Rock Teas are cherished for their special balance and layers of floral, fruity, mineral and amino acid umami flavors, coupled with the complexity of fine tannin and strength. Oolong teas of this nature are often compared to fine wine. If Fenghuang Dancong is the Burgundy of tea, then Wuyi Rock Tea is the Bordeaux or Barolo.
There are lots of unique tasting and experiential descriptors that oolong tea tasters use to describe Wuyi Rock Tea. Traditional Tea Preparation
Add 7g to a gaiwan or gongfu teapot (per 150mL).
Use 195°F boiling water.
Briefly rinse the tea and discard rinse.
Proceed to infuse 1st brew for 15 seconds.
Infuse 2nd, 3rd and 4th brew for 10-15 seconds.
Repeat several more times at 20-30 seconds, brewing until the flavor and aroma of the tea dissipates. As the tea leaves expand and unfurl, the brewing time may increase to coax out more aroma and flavor. This tea can be brewed several times in one session.

I found this tea needs steeping longer, around 60-75 seconds for the first steep and not 15 and increasing 30 secs. From there its more syrup like and not bitter or astringent. What comes through is a very strong roasted dry fruit flavor of raisen and prune and grape skin followed by a very malty oolong backed notes. Really great traditional rock oolong with profound flavor depth that's hard to pin down exactly.
