It brews a shimmering green and clear dew drop infusion with a lasting sweetness that is backed with the refreshing minerality of Kirishima's volcanic soil grown organic tea gardens.

Renowned throughout Japan as pioneers of organic tea cultivation, the Nishi family has been one of our strongest partners for organic sencha since 2006. Every year, the Nishi family produces a special batch of hand-picked shincha honoring the first growth, new tea of spring. Less than 2% of all Japanese tea is harvested by hand, so we are always thankful and eager to share such a special tea.

Shincha literally means “new tea” and represents the first harvest of the tea bushes in spring as they emerge from winter dormancy. Shincha is fresh and vibrant while being widely celebrated and anticipated by tea lovers. The shincha season starts in the south of Japan and progresses northward into the cooler high mountain regions of central Japan and Shizuoka.

Based on its character, the Saemidori cultivar is the first tea to be harvested in the spring due to its inherent growth cycle. This Saemidori tea bush cultivar is a crossbreed between Yabukita and Asatsuyu and produces a vivid, bright green infusion. Elegant yet vivacious, it bestows fresh and clear spring energy.

This Nishi family grows more than a dozen different green tea cultivars all with unique characteristics and nuances that make our blends really stand out. Our long standing relationship with the Nishi family allows us to select the very best micro-lots and fine tune our sencha and matcha blends each year. The Nishi Organic Tea Farm consists of many different gardens secluded in pine and cedar forests of Kirishima Mountain, an active volcano on Kyushu, Island. The densely forested area where these amazing tea farms are located provides a natural buffer zone that protects the tea gardens from industrial pollution.

Traditional Tea Preparation

Add 6g tea to a small (150mL/5 oz) kyusu teapot.

Use water cooled to 170°F.

Infuse for 45 seconds and decant.

Repeat for another 1-2 infusions for 15 seconds.

    Make the switch!

    I recently switched from using tea bags to loose tea, in an effort to reduce waste. I had no idea what I’ve been missing out on! Rishi teas are such high quality, I love them all!!
