Roasted teas — including Houjicha, Iron Goddess of Mercy and other roasted oolongs and green teas— offer a unique tasting experience for those drawn to warm, coffee-like flavors with mellow depth and lower caffeine content. The art of slow roasting transforms green or Oolong leaves through controlled heat, softening bitterness while drawing out rich, nutty sweetness.
While roasting changes the tea’s aroma, color and flavor profile, roasted teas still come from Camellia sinensis, a plant naturally containing catechins, polyphenols and other antioxidant compounds.
Roasted Oolong tea and roasted green tea offer a warm, toasty depth that can be fine-tuned through thoughtful preparation. For the most precise guidance, we recommend referencing each tea’s product page, as origin and style can influence ideal brewing.
As a general approach, steep 1.5 tablespoons of loose leaf tea in 12 ounces of water heated between 175–200℉ for 3–4 minutes to draw out a balanced infusion, allowing the tea’s rich, roasted character and smooth, lingering finish to fully emerge.

Roasted organic teas undergo a few extra steps. The roasting process involves exposing tea leaves to controlled heat. This brings out a warmer and often sweeter character that moves the profile away from the fresh, vegetal or floral qualities of unroasted tea leaves while preserving the qualities shaped by its origin and cultivar.
Roasting is a transformative step that deepens a tea’s character through the careful application of heat. Traditional methods include baking the leaves in a controlled roasting pan or slowly roasting over charcoal—each approach allowing artisans to shape the tea’s final expression with intention.
Regardless of the method, the introduction of heat draws out warm, toasty aromatics and enhances body, creating a more layered and rounded cup while preserving the tea’s underlying character.
