The mountainous regions of Central Taiwan produce some of the most exquisite oolong teas in the world. These teas are called “Gao Shan Cha” (High Mountain Tea) because the tea gardens are situated at much higher elevations than other oolong-growing regions.

During the peak harvesting season, cool mountain mists naturally shade the tea bushes. These foggy conditions filter intense UV light and create a unique high-mountain microclimate that encourages the gradual growth of new tea buds. This slower growth concentrates amino acids and aromatic compounds, resulting in oolong teas with remarkable aromatic complexity and nuanced flavor.

At more than 2,000 meters above sea level, the gardens of Li Shan (“Pear Mountain”) are among the highest-elevation oolong tea-producing regions in the world. Teas from Li Shan are prized for their vibrant green character, light oxidation, and elegant balance of flavor and aroma.

This batch is especially fresh and expressive, with distinctive notes of green apple, freesia, and lilac. Its smooth, silky texture is balanced by gentle umami and layered impressions of fruit and flowers.

At more than 2000 meters above sea level, Li Shan (“Pear Mountain”) is one of the highest elevation producing regions of oolong tea on the planet. The thick mists and clouds in the high mountain regions of Central Taiwan provide a natural shading effect for the oolong tea gardens which, like the shaded cultivation of gyokuro and matcha, enhances the smoothness and richness of tea.

45-60 seconds
Traditional Tea Preparation

Add 7g to a gaiwan or gongfu teapot (per 150mL).

Use water cooled to 200°F.

Don’t rinse this tea.

Infuse 1st brew for 45-60 seconds.

Infuse 2nd brew for 20-30 seconds.

Repeat several times (20-30 seconds). Brew multiple rounds until the flavor and aroma of the tea dissipates. As the leaves expand and unfurl, increase the infusion time to 1-2 minutes to enjoy the strength and essence of the tea.

    A true gem

    An exceptional Formosa high mountain oolong tea for a reasonable price. I brewed this in a gaiwan and experimented with longer brew times. Not one time did I taste any bitterness or astringency. Very smooth, sweet and delicately floral.
