A barista favorite with a bold yet smooth flavor and a bright green hue—grown using organic practices by farmers in the process of gaining organic certification.

This in-conversion matcha is shaped by mineral-rich volcanic soils and the skilled craftsmanship of partners in Kagoshima and Shizuoka, Japan, who are currently transitioning their tea gardens from conventional to certified organic production. The leaves are shaded for three to four weeks before harvest, using the same cultivation and processing methods that define our certified organic matcha, to develop the same satisfying umami depth and naturally sweet, silky texture. Smooth, full-bodied and designed to stand up beautifully in café-style drinks, smoothies and desserts, this matcha is an essential for baristas and home chefs alike.

Why in-conversion matcha?
Organic matcha is in high demand, but expanding organic supply takes time. Farmers transitioning to organic certification make significant investments before they can realize the full value of their crops. In-conversion matcha creates a market for their tea during this multi-year process.

Choosing in-conversion matcha supports farmers investing in organic agriculture while giving you exceptional matcha grown using organic practices—helping build a stronger, more resilient future for Japanese tea.
