About This Tea
This batch of Yutaka Midori is a full-bodied and juicy sencha with rich flavors of umami and sweetly toasted chestnut. No matter hot, cold, or ice-brewed, this tea really delivers the juicy and vivid green characteristics of tea from Kagoshima’s fertile volcanic soils.
Yutaka Midori (豊か緑) is a prominent and widely grown tea cultivar of the Kagoshima region, and its name translates to “rich green.” It grows well in warmer and lower-elevation climates. We gave this batch a light toast with an infrared micro-roaster to raise aromas of toasted chestnut and hazelnuts, resulting in a welcomed sweetly toasted note that complements the rich body and deep umami.

Kagoshima Prefecture is located at the southwest tip of Kyushu (the third largest island of Japan) and is largely mountainous and home to important lumber, fishing and agriculture industries. Much like the rest of Japan, this region has well manicured tea gardens with well-developed irrigation, and farmers follow strict growing procedures to produce this perfect tea bush shape and size.

Traditional Tea Preparation
Add 6g to a small (150ml/5oz) kyusu teapot.
Use water cooled to 170°F.
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions for 15 seconds.

Love the subtle toasted note, and it really does shine as a cold brew. I'm finding that mid-steamed teas tend to be my favorites, and oddly enough I don't see them offered too often elsewhere. This one especially I keep coming back to each year, and I'm bummed when it sells out.
