About This Tea
This 2025 release of Organic Gyokuro crafted by Nishi-san for Rishi Tea is something truly special. From the moment we cupped it at the Nishi tea garden this year, we knew it was a tea worth sharing. Nishi-san has worked tirelessly to produce Gyokuro using organic methods—one of the most challenging teas to grow organically due to its meticulous shading and cultivation requirements. From time to time, we cherry-pick a small lot of organic Gyokuro, but it is rare that we select one for our Garden Direct collection.

During the spring harvest season, the Rishi team tasted the aracha (unrefined tea) and decided to age it in cold storage for several months to allow the flavors and aroma to mature, harmonize, and mellow. The result is a tea that represents the pinnacle of Nishi-san’s craftsmanship—what we believe to be his finest organic Gyokuro to date.

This batch reveals rich umami depth and a smooth, velvety texture uncommon in organic Gyokuro. Its flavor balances an intense mountain energy and aroma with a deep, savory sweetness. The taste is satisfyingly smooth, offering an exquisite broth-like sensation. Notes of kombu, sweet cream, and alpine meadow highlight Nishi-san’s artistry and the purity of his organic farming methods.

Traditional Tea Preparation

Add 5-7g to a small (150mL/5oz) kyusu teapot or hohin.

Use boiled water cooled to 170°F. Add just enough water cover the tea leaves.

The traditional method of brewing gyokuro is to use about 1 part tea to 1.2 parts water. Infuse for 25 seconds and decant. You don’t want to drown the tea leaves or add too much water on the first brew.

Repeat for another 5+ infusions, adding 5-10 seconds to each subsequent infusion. Brew several rounds until the flavor and aroma dissipates. Make sure to add just enough water to cover the tea leaves each round to get the traditional deep taste and rich body.

This Nishi family grows more than a dozen different green tea cultivars all with unique characteristics and nuances that make our blends really stand out. Our long standing relationship with the Nishi family allows us to select the very best micro-lots and fine tune our sencha and matcha blends each year. The Nishi Organic Tea Farm consists of many different gardens secluded in pine and cedar forests of Kirishima Mountain, an active volcano on Kyushu, Island. The densely forested area where these amazing tea farms are located provides a natural buffer zone that protects the tea gardens from industrial pollution.
