Woojun is Korea's traditional first flush green tea that is picked in early to mid-April. Hadong is a heritage site known for tea since the first seeds were brought over from China in 828 AD. This year, our partners at Rishi Tea Korea traveled to Hadong near Jiri Mountain to experience the heritage of Korean green tea made from wild, heirloom cultivars descended from these first seeds. They reconnected with Mr. Lee Chang Yung and his daughter, Ms Duk Joo Lee, whom we have worked with for several years. They shared insights about the hand firing and baking techniques they apply to the teas harvested from their own gardens. We hope you enjoy the liveliness of the Lee family's 2019 Woojun. We find it brimming with spring energy, and evoking vibrant original mountain aromas with a very subtle roasted chestnut sweetness and delicate floral high notes.

Ingredients

Green tea

Traditional Preparation

Add 1 tbsp (4g) tea to a small Gaiwan teapot. Use water cooled to 180°F water
Infuse for 2 minutes and decant
Repeat for another 2+ infusions adding 30 seconds with each infusion.
