Winter Sprout, known traditionally as Dong Pian, is a rare type of oolong that can only be made during mid-winter in Taiwan. It is made only when the weather conditions allow, in very small quantities. The name refers to a winter phenomenon in which tiny new bud sprouts emerge at the points where young tea leaves split off from the tender branch at the top of the tea tree. These tiny winter sprouts contain a rare concentration of aromatic essences and umami-laden amino acids that are typically not coming until the spring flush. The best examples of Winter Sprout are compared to High Mountain Oolong in their sweet bouquet of fruity and flowery aromas and undercurrent of umami.

Tasting Notes: Refreshingly light in body with an exquisite flowery sweetness noted by hints of stargazer lily and vanilla blossom, finishing with delicate savory umami.

Brewing Guidelines:
Water Temperature: 190°F
Leaf to Water Ratio: Fill 25% of a porcelain guywan with tea
Steep Times: 1st infusion 1 minute, 2nd infusion 20 seconds, 3rd infusion 50 seconds, subsequent infusions about 2 minutes

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

This is one of my favorite oolongs ever. It is strongly floral with a wonderful sweetness, and also the depth and complex flavor of an oolong. This is a real treat that I stock up on every year.
