Kamairicha (farmer's sickle-shaped tea) is a special type of green tea that is made by steaming and pan-firing before drying to yield a half-round tea. This micro-lot reveals a stunning depth of aromatic complexity with multi-faceted florals usually associated with the very best oolong teas from Taiwan. The farmer artisan who made this tea, Mr. Suzuki-San utilizes oolong tea withering tactics and unique processing techniques to tease out the very special flowery aromas and elegance found in this really limited cultivar: Fushun. Every year there is such a small amount of this tea made, and we were very lucky to get some. Fushun is noted for its complexity of aroma and high mountain elevation performance.

Tasting Notes

Lilac, Wen Shan Bao Zhong oolong, Hyacinth hydrosol

Ingredients

Organic green tea.

Traditional Preparation

Add 6g of tea to a small (150ml/5oz) Kyusu teapot.
Use water cooled to 172°F.
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions.
