Description

This bright white porcelain Tasting Cup is used for professional tea tasting and evaluation in Japan and Taiwan. We keep plenty of these cups on hand for professional cupping, but also for enjoying sencha and other Japanese teas brewed in a kyusu teapot. The Tasting Cup also pairs nicely with a porcelain gaiwan for oolong tea enjoyment using the Gongfu Cha brewing method.


Japanese tea cupping technique:
Add 4g Japanese tea to Tasting Cup
Fill to brim with water off the boil (200 - 212°F)
Allow to infuse for about 90 seconds
Use a handheld mesh strainer or spider to raise the tea leaves out of the water, holding at an angle to allow the liquid to drip away. Check the aroma.
After another 30 seconds to 1 minute, remove tealeaves by creating a vortex in the cup with the strainer.


Taiwanese oolong tea cupping technique:
Add 7g Taiwanese oolong tea to Tasting Cup
Fill to brim with water just off the boil (205 - 212°F)
Allow to infuse for about 90 seconds
Dip a porcelain Tasting Spoon into the bowl and allow to rest atop the infusing leaves for 5-8 seconds. Check the infusion color against the white spoon.
Raise the spoon upside down (so the aromas remain "trapped" within the concave bowl of the spoon) and check the aromas as they volatilize and evaporate
Allow to infuse for another 1 minute, then dip spoon directly into bowl atop the tealeaves, take a draft of tea liquor, and slurp (Caution: infusion may be hot in temperature!)
