This remarkable Shincha is grown in the picturesque high elevation region of Honyama. The area is surrounded by a thick fog which helps to heighten amino acid contents and umami. The contrast between daytime and nighttime temperatures in the tea garden acts as a stressor, producing tea plants with a certain vigor. Cooler mountain temperatures also facilitate slower growth of young tea leaves, concentrating their flavor. The rocky and mineral rich soils in this mountainous region also contribute to the complexities and aromatic depth of this special tea.
All of these factors amplify the varietal character of the Yamakai cultivar, from which this shincha is exclusively made. Yamakai is often cultivated for shade-grown teas like gyokuro to create a rich umami undercurrent to balance with the uplifting aromatics.

Yamakai is prized for its intense floral fragrance; we detect notes of carnation rose note and macadamia nut in this years' harvest.

60 seconds

Traditional Brewing

Add 1 tbsp (6g) tea to a small (150ml/5oz) Kyusu teapot.
Use water cooled to 170°F.
Infuse for 60 seconds and decant.
Steep for 30 seconds on the second infusion
