Ruby #18 is our name for this grand cru black tea made exclusively from the Hong Yu ("red jade") cultivar, which was originally developed by cross-breeding a native wild Taiwan tea variety with a Burmese strain of Irrawaddy sinensis . This tea is sometimes traded under the name Ruby #18, which refers to the number by which Hong Yu is catalogued in the Taiwan Tea Research and Extension Station registry of cultivars.
It is a premier cultivar that renders a very unique character in black tea if processed with skill. The essential Ruby has a very assertive, strong flavored cup with a deep red infusion color that traditionally reveals rich aromas of exotic spices and minty wintergreen.

Tasting Notes

Our Vintage 2016 Ruby #18 is an example of how this remarkable style of black tea has the ability to transform with age, like a fine wine. The brisk tannin structure has developed gracefully and is comparable to a high grade Barolo with elegant and silky layers of flavor. This tea exudes exotic spicy notes of allspice and clove bud with notes of tropical fruits and minty wintergreen. The aging offers a nuanced sweet profile with hints of: Turkish delights, powdered sugar, Chinese jujube date, dried plum and pineapple. Each infusion reveals new tasting notes with lan hua orchid and citrus evolving in the middle and later infusions.

Traditional Brewing

Recommended Brewing Vessel: Gaiwan
Fill Gaiwan with 5-7g tealeaves
Water Temperature: 200°F
Rinse tea briefly one time
Steep Time: 20-25 seconds

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.
