Description

Ruby Black is our name for this grand cru black tea made exclusively from the Hong Yu ("red jade") cultivar, which was originally developed by cross-breeding a native wild Taiwan tea variety with a Burmese strain of Irrawaddy sinensis . This tea is sometimes traded under the name Ruby #18, which refers to the number by which Hong Yu is catalogued in the Taiwan Tea Research and Extension Station registry of cultivars. It is a premier cultivar that renders a very unique character in black tea if processed with skill. The essential Ruby has a very assertive, strong flavored cup with a deep red infusion color that reveals rich, concentrated aromas of concord grape and hints of cinnamon or mint, depending on the nuances of the season. We suggest brewing this tea using the gong fu cha method, by filling a gaiwan about 30% full of dry tea leaves and infusing with water just off the boil for only 15-20 seconds to yield numerous brief infusions from a single serving of tea leaves.

Leaf to Water Ratio: 1 tablespoon per 8 ounces
Steep Time: 2 minutes (1st infusion), 3 minutes (2nd infusion), 4 minutes (3rd infusion)

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.
