The Nishi Family is renowned throughout Japan as pioneers of organic tea cultivation, and this year, they selected several specialized lots for us, including this micro-lot of shincha crafted from the Okumidori cultivar. Okumidori translates as "deep green" and is a hybrid of Yabukita and a Shizuoka Zai Rai, which was developed in the 1970s. This later harvest tea cultivar matures to flush in mid-spring after Yabukita. Kabuse shade wrap cultivation enhances the deep, blue-green jade leaf color of Okumidori and brings out its special rich taste and fragrance.

A medium level of steaming and a particular final roast offers a balance of freshness and deep umami taste with a rich and creamy, toasted hazelnut note.
Organic green tea.
Add 6g tea to a small (150ml/5oz) Kyusu teapot
Use water cooled to 165°F
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions
