This summer monsoonal season micro-lot of Ruby Oolong is made from a special harvest of Ruan Zhi cultivar bushes growing in the Doi Mae Salong region of northern Thailand. This particular selection was subjected to artful and extensive Yao Qing, or "tumble bruising" in which the tea leaves are tossed and tumbled slowly in a rotating woven-rattan drum. This creates a specialized degree of oxidation and floral-fruity fragrance that is apparent in the tea even after it is baked. Notes of dried fruits like raisin balance with floral hints of rose and a strong, malty body in this limited micro-lot of Ruby Oolong.

Oolong tea.

Traditional Preparation

Gaiwan Brewing Guidelines:

Add 7g tea leaves per 150ml of water to a Gaiwan
Water Temperature: 200°F
Rinse 5 seconds.
Infuse for 30-45 seconds and decant.
Repeat for another 3-5 infusion

We encourage you to experiment with the quantity of tealeaves and the length of the infusion time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.
