This Yabukita cultivar sencha comes from the Kirishima mountains in Kagoshima prefecture in Japan. Grown at the Yaeyama family farm, near an active volcano and with mineral rich soils that contribute to the vibrancy in this awesome organic tea. Steamed on the lighter side of chumushi (medium steaming) levels, this sencha offers an insatiable balance of fresh bok choy like flavor with hints of salty kombu. Grown at a higher elevation than most tea gardens in Kagoshima, this sencha is harvested a bit later than the rest but its dewy, concentrated flavor makes it so worth the wait.

Organic green tea.
Add 6g of tea to a small (150ml/5oz) Kyusu teapot.
Use water cooled to 160°F.
Infuse for 45 seconds and decant.
Repeat for another 1-2 infusions.
