A refreshing example of high mountain grown Okabe gyokuro showing a balance of mild umami with bittersweet bluegrass notes that transform into silky comeback sweetness. This gyokuro showcases a classic kabuse fragrance and lovely aoi (blue-green) infusion color that develops through expert shading technique. The uniquely tight tannin structure in this gyokuro provides a pleasing contrast to low-elevation, umami-rich teas grown in lower Kagoshima and other regions.

Water Temperature: 155 - 160°F
Add1 tablespoon (5g) to a small kyusu or ho-hin teapot
Add water to barely cover the tealeaves (1.1 parts water to 1 part tea)
Infuse for 30 seconds | Add 15 seconds for each subsequent infusion
