Earl Grey Lavender Martini

2 ounces Rishi Eary Grey Lavender tea-infused gin*
.75 ounce Meyer lemon juice
.75 ounce simple syrup
1 egg white


  1. Combine all ingredients in a cocktail shaker.
  2. Shake without ice to emulsify. Add ice cubes and shake again until chilled.
  3. Strain, up, into a cocktail glass. Garnish with lemon twist.
*Add 2 tablespoons of loose leaf Earl Grey Lavender tea to 400ml of middle-shelf gin. Infuse for 2 hours and strain.
