Donut Glaze



2 to 2.5 oz milk
1 tsp vanilla extract
2 cups powdered sugar
Create a double-boiler by filling a medium sauce pot 1-inch high with water; bring to a gentle simmer. Place a heat-safe bowl on top so the bottom of the bowl is not in contact with the water.

Matcha Glaze

Add milk and vanilla extract to bowl. Sift in powdered sugar and 7 grams Rishi Barista Matcha over the milk; whisk until fully combined.

Houjicha Glaze

Add milk and vanilla extract to bowl. Sift in powdered sugar and 10 grams Rishi Houjicha Powder over the milk; whisk until fully combined.


Keep bowl positioned on the sauce pot; turn off heat. Dip donuts into the glaze, one at a time, and place on a draining rack set in a half sheet pan. Immediately sprinkle any desired topping; allow to rest for 5 minutes for glaze to set.
