This style of Dong Ding Oolong has become popular in Taiwan during the past 30 years. The fermentation of high mountain Dong Ding is lighter than the old school original style in order to showcase the high grown aromatics and silky smooth amino acid rich taste of high grown Qingxin cultivar. The baking method for high mountain Dong Ding is a light to medium roast, so the temperature is higher, but the duration is shorter. The resulting tea has a unique balance of smooth and sweet flavors with a moderate roasting character. The subtle nuance of floral and fruity high mountain oolong aroma comes through too. This high grown Dong Ding is elegant, deep and pleasing with a long lasting brewing patience.

Water Temperature: 195°F
Leaf to Water Ratio: Fill 20% of a gaiwan or clay teapot with tealeaves
Steep Times: 1st infusion: 1 minute, 2nd infusion 30 seconds, 3rd infusion 1 minute, 4+ add 15 seconds per infusion
