Fenghuang "Phoenix" Mountain is a premier tea producing region in coastal Guangdong province. Celebrated for its mineral-rich soils, foggy climate and rocky landscape, Phoenix Mountain produces teas of extraordinary patience and aromatic complexity. Connoisseurs like to study and compare the myriad tea cultivars grown here, including many which are named after the Xiang or "aroma" of specific flowers or fruits they are said to mimic, like Pomelo Flower Aroma or Almond Aroma.

Honey Black is a black tea produced from one of the more popular cultivars known as Mi Lan Xiang or "Honey & Orchids Aroma." The skill of the producer in controlling the leaf oxidation process is revealed in how the signature aromatic range of Dancong is captured and uniquely expressed as a black tea.

This 2018 vintage selection of Honey Black offers a spectacular range of floral citrus notes such as Buddha's hand citrus, bergamot, lime zest balanced with a pleasant sweetness evocative of apricot, lychee and roasted sugarcane.

Traditional Preparation

Add 1 tbsp (7g) tea per 8 ounces water into a small gaiwan or teapot.
Use 200°F water
Briefly rinse leaves. Decant and discard this infusion.
Add water and infuse for 20 seconds.
Repeat for a second infusion. Increase the steeping time to 30 seconds. Repeat for another 3+ infusions. Increase the steeping time by 15 seconds with each additional infusion.
