This year we selected two teas from the Yame region: one from Hoshino and one from Koga. Yame teas are said to be reminiscent of refreshing and invigorating mountain air. Hoshino's Gyokuro has a specialized hika roast applied that brings out that lovely mountain fragrance in vivid detail. In added complexity, the dry leaf of Hoshino's Gyokuro has a dark chocolate bar aroma. The elegant bittersweetness and aromatic points of this tea contrast with the deep umami to create a truly dynamic flavor profile that evolves through the brewing practice.

7 grams | 1 tbsp
Add 1 tbsp (7g) tea to a small (150ml/5oz) Kyusu teapot
Use water cooled to 165°F.
Add water to just cover the tea leaves.
Infuse for 20 seconds and decant.
Repeat for another 4+ infusions, adding 5 seconds to each subsequent infusion.
