White Buds, Bai Ya Cha (2009), Organic Fair Trade White Tea
Organic White Buds is one of the premier spring teas from the Mannong Manmai Ancient Tea Association. Harvested in March and the first few days of April in very limited quantities, the cool spring weather provides the slow growing buds with concentrated flavor and aroma. This is the only season that the perfect temperature and humidity conditions are present for the proper withering and final processing of White Buds. This rare white tea has a smooth and rich, almost nectar like mouth feeling with a sweet finish that suggests white peach, dried apricot, persimmon and honey wine. The aroma has a unique floral aspect with nuances of lily and magnolia. If you infuse enough buds this special tea can be infused multiple times, the first few will offer a sweet and complex flavor while the later infusions wake you up with strength and brisk flavor. The clear, reddish-amber colors of the later infusions have nuances of top quality Sheng Pu-erh and are a sure sign that you're drinking an antique assamica varietal tea.
Use a porcelain guywan, glass teapot or a Ho-hin. Infuse 3-4 tablespoons in 5-6 ounces of water. Use 185˚F water. Infuse the 1st and 2nd infusions for 4 minutes and the 3rd, 4th, 5th and subsequent infusions for 5-6 minutes, based on the desired strength. After the 3rd and 4th infusions, increase the water temperature to bring out more strength in the tea. / Ingredients: Organic Fair Trade Certified™ white tea. / Origin: Yunnan, China.
