Ancient Yellow Buds, Organic Fair Trade Yellow Tea
Yellow tea is one of the six major tea categories and is only produced in China, where its production can be traced back hundreds of years. Yellow teas are rarely exported and are mainly produced in Sichuan, Hunan, Anhui and other areas of eastern and central China. Unlike green teas, which are quickly dried after firing and rolling, yellow teas are piled to achieve partial oxidization after firing, in order to remove the fresh and brisk flavors that are common in green tea. Through partial oxidation, yellow teas develop a golden infusion color and smooth, rich flavor. The unique yellow tea pile fermentation process (oxidation) converts tea polyphenols into complex tea polyphenols known as “theaflavins,” which yield a yellow pigment in the leaf, creating a clear, golden colored infusion that is the signature of yellow tea.
Most yellow tea is made with small leaf green tea bush varietals, but our new type yellow tea is produced with the Ancient Yunnan Da Yeh broad leaf varietal, harvested in a 1500-year-old tea forest. This gives our yellow tea a unique character that stands out among all others.
Yellow Buds has a wonderfully unique profile with a rich, sweet and savory flavor accented by notes of peeled apples, magnolia, honeysuckle, baked sweet potato and rice wine. Yellow Buds resembles Silver Needle white tea and is composed of pure ripe bud shoots. It was harvested in Yunnan’s Mannong Manmai ancient tea garden and handcrafted with artisan methods inspired by Hunan’s famous Jun Shan Yin Zhen yellow piling process; however, this tea has a much more assertive and fruity flavor indicative of the Yunnan broad leaf character. Our Yellow Buds is a one of a kind yellow tea made with ancient heirloom broad leaf tea trees. Use a lot of leaf and brew one serving multiple times to enjoy the full flavors and aromas that present themselves over the course of multiple infusions.
Use a porcelain guywan, glass teapot or a Ho-hin and fill it half full with leaves. Use 180˚F water and infuse the 1st infusion for 2 minutes, 2nd infusion for 3 minutes, 3 rd infusion for 4-5 minutes and all subsequent infusions for 5-7 minutes. / Ingredients: Organic Fair Trade Certified™ yellow tea. / Origin: Yunnan, China.
