Ancient Hongqing Special (2009), Organic Fair Trade Green Tea
“Hongqing” is loosely translated from Chinese as “baked green,” and refers to the processing method used to make this tea. The initial dry roasting is followed by a final green fixation with oven drying. The Hongqing method preserves the “tippy” single leaf and bud appearance, as well as the complex aromatic and flavorful character. Ancient Hongqing is hand harvested especially for Rishi Tea by the Manmai Mannong Ancient Tea Association. It is carefully processed by our tea-making experts in late March to yield a wonderful green tea, unlike any other. This rare type of spring green tea is made from an antique Da Yeh Assamica varietal native to Yunnan. Its brisk, lively and fresh flavor is well balanced with aromatic notes of wildflowers, pomelo citrus and toasted pine nut.
Use a porcelain guywan, glass teapot or a Ho-hin. Add 2 tablespoons per 5–6 ounces of water. Use 180˚F water and infuse the 1st infusion for 3 minutes, 2nd infusion for 3 minutes and all subsequent infusions for 4–5 minutes. / Ingredients: Organic Fair Trade Certified™ green tea. / Origin: Yunnan, China.
