White Peony, also known by the traditional name Bai Mu Dan, is a popular style of white tea made of young tea leaves and silvery unopened leaf buds. Our White Peony comes from Zhenghe town in Fujian Province, the original birthplace of white tea centuries ago. Distinguished by being plucked in "budsets" of one or two leaves and a bud, this tea has a sophisticated mouthfeel with a slightly stronger body than Silver Needle. A gentle and slow air-dry withering process results in a brilliant amber infusion with a honey-like viscosity and mild flavor that pairs well with food.

Additional Info: Bai Mu Dan is popular in Hong Kong and amongst Cantonese as a digestive aid and is often served during a meal. White Peony goes well with any food and brews an amber-orange, smooth infusion with low astringency and a mild flavor. It is noted to be cooling and refreshing.

Water Temperature: 185°F
Leaf to Water Ratio: 2 tablespoons per 8 ounces
Steep Time: 4 minutes (1st infusion), 5 minutes (2nd infusion)

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

Like the previous reviewer, I was buying this at the local health market before buying it directly from here. The directions I use are a little different (2-3 tablespoons per cup, 2-2.5 minutes with a water temperature around 150F), which makes the tea stronger and more robust without making it any more bitter (brewed this way, it's good for 2-4 infusions). Overall, the flavor is extremely gentle and sweet, like honey suckle. As a college student, money doesn't exactly grow on trees for me, but this tea offers a luxurious delicacy at an affordable price for just about anyone.

I've been buying this tea, first in the small cans at Whole Foods, and now in the pound bags directly from the Rishi website for several months. I normally brew about 1 TBSP for 4 minutes 3-4 times a day and it's perfect. Just enough caffeine to keep you going without the jitters. The quality is excellent and far exceeds anything else available including Teavana.
