Ruby is our name for the Hong Yue (literally "red jade") cultivar, a premier black tea cultivar in Taiwan that renders a very unique character if processed with skill. Ruby has a very assertive, strong flavored cup with a deep red infusion color and is best for gong fu cha style brewing, using a lot of leaf and short infusion times to yield multiple cups from the same serving of leaf.

Leaf to Water Ratio: 1 tablespoon per 8 ounces

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

I almost didn't get this tea bc it's a bit expensive. I ended up ordering it so I wouldn't have to pay shipping. So glad I gave it a try! I ordered several black and oolong teas that are all wonderful, but this was by far the best tea I have ever tried! When I opened the packet it came in I was blown away by the sweet and unique taste! It's super smooth with no bitterness which is rare in black teas. I can't put in words the wonder of this perfect tea! When I get the itch to splurge again it will be this stuff! I can taste why it's so pricey, but not sure why no one else has posted about this Ruby! If you try it.. you will love!
