Mr. Nishi-san was an inspiring pioneer of organic tea farming in Japan. Rishi Tea has a private contract-growing relationship with the Nishi family, and together we established a USDA-NOP Organic Certified tea project in Kagoshima, Japan. The Nishi family's teas are exquisite due to Mr. Nishi-san's expertise in organic tea cultivation and aracha processing. The Nishi family farm takes great care to nurture Yabukita and other premier tea varietals, ensuring that Rishi Tea Organic Sencha is superb year after year. Our First Flush Sencha from the Nishi tea farm is a light-steamed type (asamushi) from the first harvest of spring when the highest quality tea is produced. Its unique flavor comes from a special blend of unique Japanese tea bush varietals cultivated for us according to strict EU and USDA-NOP Organic certified standards.

Tasting Notes: Refreshing and brisk with a pleasant bitter-sweetness, deep umami flavor and a greenish-golden infusion color

Basic Brewing Guide:
Water Temperature: 160°F
Leaf to Water Ratio: 1 tablespoon per 8 ounces
Steep Time: 1.5 minutes

Traditional Brewing Guide:
Teaware: Japanese Kyusu
Water Temperature: 160°F
Leaf to Water Ratio: 10g per 320ml (11oz)
Steep Time: 45 seconds, 1st infusion; 15 seconds, 2nd infusion

For the best infusions, we recommend brewing this tea in a Tokoname teapot.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

I've had the highest-end sencha green tea from every other brand worth noting and this Kagoshima First Flush is right at the top. Some of the best green tea I've ever had and I've been exclusively drinking green teas for almost 10 years now. I'm tempted to buy another 250g bag because I know this won't last long in my house.
