This year's spring High Mountain Oolong tea from Li Shan (Pear Mountain) has an incredibly fruity character with tropical hints of passionfruit, papaya and mango. These notes come through over a deliciously soft, smooth mouthfeel and rich fruity taste. One of the reasons we picked this tea at the cupping table this year out of numerous micro-lots was that it showed very deep patience–the ability to infuse multiple times. This is a great quality to have in a High Mountain Oolong, and especially suitable for the Gong Fu Cha brewing method. Focus on short infusion times, and savor the evolving flavor of the tea as the leaves gradually open up from one infusion to the next. Li Shan, located in north-central Taiwan, is a very traditional mountain for Gao Shan Cha known for its very balanced teas offering both smooth sweetness and interesting floral and fruity aromas.

Tasting Notes: This smooth spring Gao Shan Cha reveals fruity notes of passionfruit and papaya over the course of many infusions.

Brewing Guidelines:
Water Temperature: 190°F
Leaf to Water Ratio: Fill 25% of a porcelain guywan with tea
Steep Times: 1st infusion 1 minute, 2nd infusion 20 seconds, 3rd infusion 50 seconds, subsequent infusions about 2 minutes

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

Lots of nuance and flavor which creates a truly enjoyable tea session. So far I've been steeping at 1 gram/oz and initially steeping for 2.5 minutes at around 195 F. Creates a really lovely flavor profile, with lots of complexity and wondrous subtlety. I'll continue to experiment on ways to brew this excellent tea that's a joy to drink and ponder. Appreciative for the good pricing that Rishi offers for this fine tea.
