Kirishima Mountain Shincha was produced by the Nishi Family in their certified organic tea gardens at 300-450 meters above sea level in Kirishima Mountain during the 2013 1st Flush harvest season. This amazing mid-steamed, chumushi sencha combines 6 micro-lots of from the various varietals Asatsuyu, Yabukita, Okumidori and Okuyutaka harvested from late April 2013. This sencha features a wonderfully bright and lively emerald green infusion with a smooth mouth feeling, medium body and light roasting during the final drying that balances a chestnut note with the fresh evergreen and invigorating character of the high grown spring teas from this area of Japan. The Nishi Family always produces rich green teas with unique organic quality.

Water Temperature: 160°F
Leaf to Water Ratio: 1 tablespoon per 8 ounces
Steep Time: 1st infusion 45 seconds, 2nd infusion 20 seconds
We suggest brewing 1 tablespoon of shincha in a Fukugata or Kikumaru kyusu teapot. The first brew is deep, rich green and fresh with a smooth and creamy texture. The second brew has a similar character with a hint of bittersweet flavor and sharpness that's mild and refreshing.

This tea has a wonderful, characteristic aroma when the bag is opened. It brews a pale green with the recommended time/temp and has medium viscosity with no bitterness and hints of anise. It really shines on the second steeping and is enjoyable for at least three steeps. A refreshing change from bolder sencha styles, has a well supported complexity and is subtle although definitely not insipid.
