This incredible black tea from the Jun Chiyabari tea garden in Nepal is rolled by hand, a traditional method that allows for the development of rich, nuanced flavors. With a high concentration of tea "tips" or leaf buds, this tea has an abundantly smooth, sweet flavor with an amber infusion that has the richness of honey.

Tasting Notes: This micro-lot of Himalayan Gold from the Jun Chiyabari Tea Garden in Hile, Nepal shows a beautifully rich golden color with a thick caramel sweetness and lovely orange blossom honey aroma. We suggest brewing this tea in our Guywan and pouring into our Aroma Cup to concentrate and enjoy the high floral notes of this rare seasonal selection.

Ingredients: Organic black tea

Hile, Nepal
Water Temperature: 200°F
Leaf to Water Ratio: 1 tablespoon (5grams) per 8 ounces
Steep Time: 2-3 minutes (1st infusion), 4 minutes (2nd infusion), 5 minutes (3rd infusion)

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

I loved this tea. It is a lighter color tea. It has a really mild flavor. It is one of the best black teas I have ever had. Worth the money. The only thing I recommend to steep it for longer than 40 seconds. Otherwise it doesn't fully develops. I like to steep it for 2 minutes the first time and 3 minutes the second time.

I have a hard time putting a finger on the flavor of this tea but it's very unusual and good. The dominant elements are a honey sweetness (almost mead-like) and a bit floral, but there's a "woody" or almost "smoky" quality that also is very apparent. There's a
"wild" unrestrained quality to this tea that differentiates it. Very hard to pin down, but I keep coming back to it! The medium to full body and flavor complexity make this more oolong than black tea-like in my book.
