Our contemporary version of this classic blend was developed in French tea salons and has pleased the palate and raised the eyebrows of more than a few Earl Grey purists. Earl Grey Lavender is handcrafted in small batches and infused with pure essential oils of real fruit and flowers.

Tasting Notes: Enchanting lavender perfectly complements the floral aromas and citrus notes of Earl Grey

Ingredients: Organic black tea, organic lavender flowers, essential bergamot and lavender oils.

Rishi Tea Blend
Water Temperature: 212°F (boiling)
Leaf to Water Ratio: 1 tablespoon per 8 ounces
Steep Time: 4 minutes (1st infusion), 5 minutes (2nd infusion)

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

This is simply the best Earl Gray tea I have tasted.
I can't imagine starting my day without it.
The black tea component has a full yet not bitter flavor and the lavender has a full bouquet.
No sweetener is needed

Vegan Lavender Earl Grey Cupcakes with Lemon Buttercream Frosting

For the cupcakes:
• 1 cup soy milk
• 2 tablespoons Fair Trade Certified Rishi Lavender Earl Grey tea
• 1/4 cup canola oil
• 1/2 cup plain soy yogurt
• 3/4 cup Fair Trade Certified granulated sugar
• 1 teaspoon Fair Trade Certified vanilla extract
• 1-1/3 cups all-purpose flour
• 1/4 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon lemon zest
• 1/2 teaspoon orange zest

For frosting:
• 1/2 cup (1 stick) unsalted vegan butter (I used the Earth Balance brand)
• 2 cups Fair Trade Certified powdered sugar (sifted)
• zest of 1/2 lemon
• 1-1/2 tablespoons lemon juice

Make the cupcakes:
Preheat oven to 375º and line tin with cupcake liners. Heat soy milk until almost boiling, add the tea and citrus zest, cover and remove from heat. Let sit for 10 minutes. Strain the liquid to remove the tea leaves.

In a large bowl, whisk together oil, yogurt, sugar, vanilla and tea mixture until all yogurt lumps disappear. In another bowl, sift the flour, baking powder, baking soda and salt, and then combine with the wet ingredients. Mix until large lumps disappear; some small lumps are okay. Fill tins full and bake about 20 minutes until a sharp knife inserted comes out clean. Allow to cool. Makes 1 dozen.

Make the frosting:
Cream the butter until smooth, gradually beat in the powdered sugar until the mixture is very fluffy. Zest the lemon over the bowl into the frosting, add the lemon juice and stir until smooth. Spread or pipe the frosting on cooled cupcakes. You can put the frosting in a zip-lock bag and cut off the bottom corner to create your own piping tool.
