Moonlight White has a truly unique character because it is cultivated from ancient assamica variety tea trees with rich phytochemical potential. The fruity, honey-like, and brisk character of Moonlight White differs from the more savory character of white teas originating in Fuding, Fujian Province.

Basic Brewing Guidelines
Water Temperature: 185°F
Leaf to Water Ratio: 2 tablespoons per 8 ounces
Steep Time: 4-5 minutes
This tea is best brewed using a porcelain guywan, glass teapot, or Ho-hin. Infuse 4 tablespoons (6-7 grams) in 5-6 ounces of water. Use 185°F water. We recommend 3 minutes for the first and second infusions, then increase the time for subsequent infusions.
We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

I use the guywan to brew this tea and a fourth of a spoon of sugar which seems to bring out an even more refreshing flavor. I would highly recommend this white tea, just be sure to brew it right.
