The tea master who made this tea used the traditional way, taking care to utilize enough sunlight during the first part of the tea withering processing. The oxidation degree is the highest of our three batches of spring season High Mountain Oolong (Gao Shan Cha) teas we offer this year, which lends this tea its delicious floral notes. The tea master applied very light pressure to the tea leaves during the ball-shaping process in order to retain the special aromas teased out of the tea leaves during oxidation, creating a sublimely balanced taste profile. We love this tea for its amazingly rich and floral golden infusion with aromatic accents of gardenia and lilac.

Brewing Guidelines:
Water Temperature: 190°F
Leaf to Water Ratio: Fill 25% of a porcelain guywan with tea
Steep Times: 1st infusion 1 minute, 2nd infusion 20 seconds, 3rd infusion 50 seconds, subsequent infusions about 2 minutes

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

I took a gamble as it seems I always do when buying Ali Shan. I have had Ali Shan twice that has had a ridiculous flavor complexity above and beyond the several batches I have had over the years. The scent I can remember of the best Ali Shan when dry, had almost a fruity smell to it, not far off from a blueberry. Along with that typical light vegetal/floral odor. This was the only couple batches I tasted that seemed to also carry the flavor complexities I wish it always had when brewed. The Winter 2013 batch is lacking greatly. In aroma and taste. Even more then the previous batches that came up short. I almost want to say after the 3rd steep, the taste is about gone in this newer harvest (2013). Not to mention it falls very flat compared to the best I have had. I wouldn't have been so irritated had I not been led to believe this is one of the most amazing harvests to arrive. However it is unlikely a retailer is going to tell you that a product they sell is bad. I purchased five bags which wasn't the best decision. I also think it seems cheaper then the magical stuff I had purchased years ago. Maybe that was an indicator? I will say there was one time I called and got a very honest response from someone about a type of tea that left a sub par conclusion. The best Ali Shan once purchased here, and one time from a competitor a few years or so in the past. Once again. Not this time.
