The Assam region of Northeast India is famous for its black tea production. The sub-tropical valleys of Assam in which tea is cultivated yield gutsy, bold infusions with full body and flavor. Our single estate Golden Assam is from orthodox manufacture and has an abundance of even grade leaves and golden buds.

Water Temperature: 212°F (boiling)
Leaf to Water Ratio: 1 tablespoon per 8 ounces
Steep Time: 4 minutes (1st infusion), 5 minutes (2nd infusion)

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.

This batch of Golden Assam is quite bitter at 4 minutes of steeping, let alone 5. I'd suggest a tablespoon per 8 oz at 3-3.5 minutes instead of these parameters. A second steep isn't a good idea.

To the previous reviewer: you must have received a different batch than I. Tis tea, when brewed according to the instructions and finished with a dash of (soy)milk, as most assams are traditionally enjoyed, has the most amazing toasty-malty finish of any Assam in recent memory! i just wish Rishi were not so stingy with the amount in their new paper packaging at my local Whole Foods.
