White Peony is the most common style of traditional white tea and consists of two tealeaves and a silvery bud. Gentle processing and a unique withering process result in an amber-orange infusion with low astringency, weighty mouth-feel and a mild flavor that pairs well with most foods.

Tasting Notes: Soft and refreshingly sweet with a pleasant woodsy, roasted aroma.

Ingredients: Organic white tea.

Additional Info: Bai Mu Dan is popular in Hong Kong and amongst Cantonese as a digestive aid and is often served during a meal. White Peony goes well with any food and brews an amber-orange, smooth infusion with low astringency and a mild flavor. It is noted to be cooling and refreshing.

This tea originates in Fujian, China.

Water Temperature: 185°F
Leaf to Water Ratio: 2 tablespoons per 8 ounces
Steep Time: 4 minutes (1st infusion), 5 minutes (2nd infusion)

For the best infusions, we recommend brewing this tea in a Guywan.

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of tea.
