Organic Fair Trade The flavor of green tea is defined by the "varietal" or kind of tea bush that is harvested. Although all tea comes from the Camellia sinensis evergreen, there are more varietals of tea bushes than there are different types of grapes selected for wine. Each tea varietals has a unique character. The region of cultivation, the season of harvest and the method of processing the fresh tealeaves also influence the character of green tea. The soil type, the elevation and ecological condition of the tea garden greatly contribute to the flavor and characteristics of green tea. A sip of green tea can let us know where the tea was cultivated as well as when and how it was made. Each origin has its own signature flavor and aroma. No matter the origin, green teas are classified according to process. There are thousands of green teas on the market and all of them into one of the following basic categories: steamed, pan-fried, combination roasted, baked or sun-cured.
